“I’m just going to have one slice”, can quickly turn into, “did I really just eat that whole box?” Let’s get serious.. You can’t just eat one slice of pizza and be satisfied. It can’t happen. Just can’t.
Now you can have your CRUST and CHEESE and eat it too! I found such a great recipe from one of my favorite food network stars, Katie Lee. Her recipe for cauliflower pizza crust is genius. I like crunchy crust so I’ve tweeked it a little bit and added a few of my favorite flavors.
- 4 pounds cauliflower (equals two bunches)
- 2 eggs
- 1/2 cup goat cheese (herbed)
- 2 cloves minced garlic
- Fresh mozzarella
- Your favorite toppings!
Step 2: blend the cauliflower in a food processor until it becomes a “rice” like texture. Place in a thin dish towel and squeeze all the water out. You want to get as much liquid out as possible
Step 3: add in 1/2 cup goat cheese, 2 eggs, and 2 cloves minced garlic. Form the dough on a pizza pan or baking sheet lined with parchment paper. The dough should be 1/4-1/3 inch thick depending on how crunchy you want it. I prefer 1/4 inch thick because I like my dough extra crunchy. Step 5: bake at 400 degrees for 40-45 minutes. Step 6: load on all your favorite toppings. Try and use fresh veggies, herbs, and mozzarella.

This oven smores recipe is AMAZING!
Preheat over to 450 degrees. While your oven is pre-heating place your cast iron skillet or pan into the oven while its heating up so the pan gets extremely hot.
Once the oven is ready take out the pan and add butter, layer the Reese cups, and then add the chocolate chips on top.
Add the marshmallows around the whole pan. Bake for another 5-7 minutes until marshmallows are golden brown. I also turn on the broiler for 15-25.
