Sweet taste of summer 

On a hot summer day there is nothing more refreshing than ice cold fresh fruit. I’ve been wanting to make the “watermelon ice” cake I’ve seen on Pinterest. Watermelon is 92% water and packed full of electrolytes and vitamin C. It also helps boost your metabolism and immune system so it’s already a plus in my mind. (And at only 43 calories per cup.. you could technically eat the whole thing and not feel guilty.)

Let’s start!

Cut both ends of the watermelon off  so it forms a cake like body. Then cut off the rind. (See below)    Ice the watermelon with whipped cream. Top with your favorite fruits. 

To make the fresh whipped cream:

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla flavoring
  • Pinch of salt

Mix ingredients together until you get fluffy peaks of yumminess.
